- 1 cup long-grain white rice rinsed
- 1 can 15 oz black or pinto beans, drained and rinsed
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt adjust to taste
- 1/4 teaspoon black pepper
- 1 1/2 cups chicken broth
- 1 tablespoon olive oil
- Chopped cilantro for garnish optional
- Lime wedges for serving optional
Sauté the Chicken: Set the Instant Pot to 'Sauté' mode. Add olive oil and sear the chicken thighs for about 3-4 minutes on each side until browned. Remove and set aside.
